Avocado Pesto Zoodles
Ingredients
Walnut Meat
1 cup raw walnuts
1 tbsp olive oil
1 tsp oregano
1/4 tsp sea salt
Avocado Pesto
2 ripe avocados
1 cut fresh basil leaves
3 cloves garlic, peels
1/4 cup pine nuts
1 tbsp lemon juice
1/2 tsp sea salt
3 tbsp olive oil
Zoodles
3 large zucchini, spiralled
1 tbsp olive oil
1/4 cup sun dried tomatoes, sliced
Instructions
To make Walnut Meat, combine the walnuts, olive oil, oregano, an sea salt in a food processor. Process until desired consistency and set aside.
To make avocado pesto, in a food processor combine, avocados, basil, garlic, pine nuts, lemon juice, and sea salt and blend until smooth. Set aside.
In a large pan add olive oil and turn on to a medium heat. Add zucchini noodles and cook for approx 2 mins – or until tender.
Add pesto, walnut meat, and sun dried tomatoes and toss with zoodles.
Serve on its own or as a side dish.
